Late twenties: the largest list on the register
Half the register sits on this list, which is the usual shape of a London desk that has been choosing carefully rather than quickly. These are the women guests come back to, and the reason is almost always the same: they have done enough evenings to know what one needs and not so many that they have stopped enjoying them.

Thea is 165 cm and curvy, caramel blonde, and she starts from half past eight because a supper worth having runs past midnight.
The one for a room of strangers
Samanta is 174 cm and slim, dark brown haired, and entirely at home among people who all know one another and none of whom she has met. She works Thursday to Saturday from eight, likes live music upstairs and a table away from the stage, and walks the docks afterwards.

Why repeat bookings start here
